Lemon-asparagus Pasta
Ingredients
- Uncooked angel hair pasta - 8 oz
- (1-inch) sliced asparagus - 2 cups
- Chopped green onions - 1/2 cup
- Olive oil - 3 tbs
- Fresh lemon juice - 2 tbs
- Lemon rind - 2 tsp
- Garlic, minced - 2 cloves
- Salt - 1 tsp
- Black pepper - 1/2 tsp
Instructions
- Cook pasta according to package directions (omit salt and fat).
- Add asparagus to pasta during last 3 minutes of cooking time; drain.
- Stir in remaining ingredients, and serve immediately.
