Barramundi Over Tomato And Spinach Sauce
Barramundi fish is also known as Australian Seabass, it has a mild flavor and a dense meaty texture; delicious at an affordable price. In South Florida, you can buy Barramundi at BJ’s and Whole Foods
Ingredients
- Barramundi Fish - 4 Fillets
- Frozen Spinach - 2 Cups
- Yellow Onion - 1
- 2 tbs Vegetable Oil or Coconut Oil - 2 tbs
- Tomato Sauce - 8 oz Can
- Salt and Pepper - To Taste
- Oregano - To Taste
- Basil - To Taste
- Parsley - To Taste
Instructions
- Heat saute pan to medium and add onion.
- Add onions and cook for about 3 minutes.
- Add spinach, cook for another minute and add the fish , cover with tomato sauce and cover.
- Simmer for about 5 minutes, stir without turning the fish so it won’t break apart.
- Taste, add salt or spices as needed, cook for another 5 minutes and serve hot over pasta or rice.
